This Month's Recipe
4 to 6 pieces thinly sliced ham
1 cup boiled rice
1 cup pinto beans, cooked
4 slices of ham, thinly sliced
1 cup salsa
¾ cup shredded cheese
Sauté tortillas, drain and set aside. Fry ham until crispy. Place 2 tortillas flat on an ovenproof dish. Place three mounds consisting of rice, ham, and beans across the tortillas in a line (with ham in center). Fry eggs (two per serving) sunny side up and place on top of rice, ham, and beans. Spoon salsa over eggs and top with cheese.
Place under the broiler until the cheese has melted and the eggs have cooked ever so slightly. Serve immediately with additional tortillas (heated) and butter.
Serves two.
This is particularly good when served with a rather sweetish, hot salsa. It also makes a very good late breakfast or brunch. This kind of meal is very filling and shoukd keep everyone from wanting something until much later in the day.
