CUCUMBERS WITH OLIVE OIL AND VINEGAR

5 or 6 small pickler cucumbers
Olive oil
Balsamic vinegar
Olive oil
Balsamic vinegar
Salt and pepper to taste
Fresh dill
Fresh dill
Wash cucumbers and score with a fork. Then slice and dress with olive oil and balsamic vinegar. Chill until ready to serve. Season with salt and pepper and some fresh dill.
Serves 4.
Both of these salads are excellent when these fresh small cucumbers are in season (especially if they are from your own garden). Try to only use these small cucumbers; this does make a difference.
What is especially nice about these salads is that they are so simple to fix! Scoring the cucumbers gives them a nice presentation for the table. It is important to keep them cool in order to retain their crunchy crispiness. The fresh dill adds a unique freshness to the mixture.
