BARBEQUE VEGETABLES

1 large baking potato
3 carrots
2 med. onions
3 stalks celery
2 med. tomatoes
3 carrots
2 med. onions
3 stalks celery
2 med. tomatoes
1 med. zucchini squash
1 stick butter
Salt and pepper
½ tsp. Worcestershire sauce
1 stick butter
Salt and pepper
½ tsp. Worcestershire sauce
Cut vegetable into bite-size pieces and arrange in baking pan. Season with salt and pepper and Worcestershire Sauce. Melt butter and drizzle over vegetables. Wrap in aluminum foil and place on grill.
Cook slowly until almost tender. Remove foil and continue cooking until vegetables brown.
Serves 4 to 6.
This does nicely when served with a good roast or steak that has been grilled at the same time. While I believe it tastes best when cooked on an outside gas grill (don’t ask me why), it can also be effectively cooked in the oven.
