This Month's Recipe
8 strips of crisply fried bacon
2 tbsp mayonnaise
4 slices white bread, toasted slightly
salt and pepper to taste
squeeze of lemon juice
Spread mayonnaise on each slice of bread. Peel and slice avocado in long slices about ¼” thick and place on one slice of bread. Season with salt and pepper and a small squeeze of lemon juice. Place four slices of bacon on top of avocados and then add the top slice of bread to complete the sandwich. Cut and serve.
Serves two.
It goes good with thinly sliced French or white bread. Lightly toast the white bread for crispness (and the French bread if needed).
This sandwich is extremely good and amazingly enough is just the result of having “nothing in the refrigerator to eat on an early Saturday morning.”
4 slices regular loaf white bread
Butter
Oil
1 tomato, sliced
Salt and pepper
Place cheese on bread and make two sandwiches. Butter each side of sandwiches with soft butter. Heat a skillet on medium heat and melt some butter and gradually add some olive oil so that it covers the bottom of the skillet very lightly.
Add sandwiches to skillet and brown both sides slowly until bread is crispy. Remove from skillet and open each sandwich. Place a thick slice of tomato inside of each and season with salt and pepper. Quickly close sandwiches and cut in half or quarters.
Serve immediately. Serves two.
This is a very tasty, easy to prepare sandwich and is particularly good when you can go out in the garden and get a nice fresh ripe tomato to enhance its flavor. Use fresh ground pepper for the seasoning and see just how good it can be.
For variation with the tomato insert, try using crisp bacon or similarly crisp ham left over from breakfast.
