This Month's Recipe
¾ cup homemade mayonnaise
1 tbs. Dijon mustard
¼ tsp. salt
¼ tsp. white pepper
drops of Tabasco sauce
2 tbs. prepared horseradish
4 green onions, minced
2 sweet pickles, finely minced
2 tsps. sweet pickle juice
paprika and fresh chopped chives
Cut eggs in half and remove yolks. Process yolks, mayonnaise, mustard, salt, pepper, Tabasco sauce in food processor. Peel and chop shrimp. Fold in shrimp, horseradish, minced onions, pickles and pickle juice. Adjust seasonings according to taste. Spoon or pipe filling into egg white halves and chill. For best results to allow flavors to properly mingle chill at least eight hours.
Garnish with paprika and fresh chopped chives.
